We are cookie dough connoisseurs around here. I adore this cookie dough with its sweet buttery crunchiness. It is awesome as a cookie, but really, the dough is where it’s at. The secret is in the cornflakes and coconut. There is even oatmeal in there. Heck, it’s practically a health food! Try it and tell me if you agree:
1 c butter, softened
1 c brown sugar
1 c sugar
2 eggs (substitute 1/4 c milk if making for dough-eating)
1 tsp vanilla
1 tsp salt
1 tsp baking soda
1 tsp baking powder
2 1/2 c flour
1 c oatmeal
1 c chocolate chips
1 c cornflakes
1 c coconut
Mix butter, sugars, eggs, and vanilla. Mix in dry ingredients until just blended. Stir in oatmeal, chocolate, cornflakes and coconut. Bake at 350 degrees F for 10 – 15 minutes (or substitute milk for eggs, sit back and enjoy the dough).
Oh my gosh! Those cookies look awesome! Can’t wait to try them! Thanks for sharing.

Do you use toasted coconut?
No, I use sweetened coconut straight from the bag!
